Chicken Salad Apple Bites

 

Chicken salad apple bites are the best, quick little snack. If you make extra, you can add them to your to-go salad for lunch the next day! I am not normally a fan of canned products, but organic canned chicken or organic wild-caught salmon in BPA-free cans are a great way to get protein in our busy lives!

As with any recipe, feel free to get creative and try some different spices, vegetables, etc. This recipe would work well with added olives, canned salmon, or canned sardines.


Ingredients

  • 1 small apple sliced

  • 5 oz. canned organic chicken

  • 1/3 chopped red onion

  • 10 chopped cherry tomatoes

  • chopped green onion for garnish

  • 1-2 tablespoons Primal Kitchen avocado mayo

  • sea salt + pepper to taste


DIRECTIONS

  1. Combine the chicken, chopped red onion, cherry tomatoes, and mayo.

  2. Place a small amount of chicken salad on top of each apple slice.

  3. Garnish with sea salt, pepper, and chopped green onion.
