Eggs Benedict

Alright, I can’t promise I won’t keep using some TK egg methods, especially when we get into homemade Hollandaise sauces, mayonnaise, aioli, etc. The man knows how to handle his eggs.

While this recipe uses his methods for poached eggs, the rest of the recipe is super easy to throw together because it is all store-bought.

This might be the best time to tell you about my love for Primal Kitchen dressings and sauces. Somehow Primal Kitchen missed the mark on their protein bars, but everything else they make is amazing. Plus have you seen Mark Sisson’s abs? He’s 68 and rocking those Primal Blue Print diet abs. They speak for themselves. Look it up, seriously.

I would love for readers to mix this recipe up a bunch! There are so many different bases you can use instead of a gluten-free English muffin. Examples include white potato, sweet potato, Food for Life Gluten-free English muffins, Simple Mills bread or dinner rolls, large leaf lettuce, salmon, sardine, or crab cakes, zucchini, carrot, or potato cakes, etc. Simple Kneads gluten-free artisan bread is probably my favorite option because of the nutritious ingredients and delicious taste.


Ingredients

  • 1-2 poached eggs

  • Canadian Bacon

  • gluten-free bread of choice (I used Food for Life’s GF English muffin)

  • Primal Kitchen Hollandaise sauce

  • Mixed Leafy Greens

  • Olive oil, sea salt, pepper

  • Fresh Parsley and Chives


 DIRECTIONS

  1. TK’s method for the perfect poached eggs:

    A. Add 4-5 tablespoons of distilled vinegar to boiling water and reduce to a simmer.

    B. Create a vortex by stirring the water clockwise with a large spoon.

    C. Crack your egg into the water. Continue stirring while the water simmers.

    D. TK does not give an exact amount of time. He expresses that you learn over time when the egg is done. Remove the egg after 6 minutes and remove the excess whites.

  2. Toast your choice of bread or English muffin. I used Food for Life’s GF English muffin. However, I think I prefer using a boiled potato or Simple Mills dinner rolls. I will experiment with different options in future recipes.

  3. Sautee your Canadian bacon.

  4. Add leafy greens to your plate. Drizzle olive oil over the leafy greens.

  5. Add your English muffin with a little bit of ghee.

  6. Top with Canadian bacon, your poached egg, Primal Kitchen Hollandaise sauce, fresh parsley, chives, sea salt, and pepper.
