Dragon fruit Ice cream
Out of all of the desserts, we make ice cream the most frequently. We typically make chocolate ice cream, vanilla ice cream, or mint chocolate chip, but sometimes we like to mix it up with red dragon fruit ice cream because it is so pretty.
Grain-Free Bagels
This bagel recipe was created after trying the bagel recipe from Elana’s pantry. I have made them a few times, and they are very good. I love the texture and the subtle buttery taste. The ingredients are clean and I enjoy mixing in the flax meal, which is full of omega 3 fatty acids and provides the needed gelatinous quality that normally comes from the gluten in wheat flour.
Gingerbread
I originally thought this recipe would be in the snack section of the recipes. I wanted to include a homemade snack bar or protein bar. However, this recipe was so sweet and tasty that it really holds its own as a dessert. I will have to experiment in the future with a gingerbread protein bar.
No Fudging Way (Healthy Fudge)
Luckily, I discovered this fudge recipe early on in my quest to feel better. I loved it so much and was so excited about all of the different ways you could adjust the recipe to add some unique flavors that I considered starting my own healthy fudge company, called “no fudging way.” While I never took the steps to get my fudge company going, I am definitely excited to share this recipe! I hope you enjoy this fudge as much as I do.
Flourless Coffee Brownies
Flourless brownies are a quick dessert you can throw together as long as you have cacao powder, eggs, and maple syrup. You can add arrowroot flour or try coconut or almond flour. I really enjoyed the chocolate chips for some texture and added sweetness. The coffee taste was subtle. I might try adding more coffee grounds next time or even try adding decaf coffee to avoid caffeine late at night. You can also add almond butter or peanut butter if you like your brownies a little bit creamy.
