Dragon fruit Ice cream
Out of all of the desserts, we make ice cream the most frequently. We typically make chocolate ice cream, vanilla ice cream, or mint chocolate chip, but sometimes we like to mix it up with red dragon fruit ice cream because it is so pretty. Despite its vibrant color, dragon fruit is actually a rather mild-tasting fruit so it’s helpful to add some vanilla powder for some additional flavors with the bananas.
We don’t have kids yet, but this seems like a super fun dessert to make with kiddos because the color is so bright! Our recipe for ice cream always includes canned coconut milk and our Cuisinart 1.5-quart frozen yogurt ice cream maker. You can add banana, avocado, or nut butter to make the ice cream extra creamy. Maple syrup or fruit will add sweetness, and then you can explore all of the different flavors, trying a different flavor each time you make ice cream.
Ingredients
1 can organic full fat coconut milk (I used Native Forest)
2 bananas
1 whole red dragon fruit
2 tablespoons vanilla powder
2 tablespoons strawberry powder
garnish with a few mint leaves.
Directions
Blend all ingredients together.
Add the mixture to your Cuisinart ice cream maker (make sure the double-insulated freezer bowl has been in the freezer overnight or for at least 8-12 hours).
Ice cream should be ready in 20-25 minutes.
Scoop and serve.
Garnish with mint leaves, berries, or enjoy life chocolate chips.
